The Bordo is table wine made from Vitis labrusca grapes with great economic importance in the Brazilian Serra Gaucha region due to market appreciating its fruity flavor, color intensity, and violet hue.Due to these aspects and the dry climatic conditions in summer 2005 when rain precipitations were at 38% of normal, samples of the Bordo wines from Flores da Cunha in the Serra Gaucha were analyzed.The analyzed wines were varietal and made according to specific technol. of each winery.The anal. examined 39 variables; the average parameters of the most expressive ones were: ethanol 10.58 volume%, total acidity 91 mEq/L, volatile acidity 7.3 mEq/L, pH 3.21, dry extract 24.24 g/L, reducing sugars 2.90 g/L, reduced dry extract 22.34 g/L, ash 2.09 g/L, tartaric acid 5.35 g/L, optical d.
