The experiment made LiaoDong specialty-wild Crataegus pinnatifida var. major and Crataegus pinnatifida as the raw material to make compound fruit wine.The best process and formula of compound fruit wine have been explored through single factor experiment, orthogonal test and sensory evaluation.The results show that the raw material ratio of Crataegus pinnatifida and hawthorn was 2 : 3, the count of yeasts was 0.5%, syrup liquid 15%.The fruit wine gained finally has bright color, good smell of bouquet and fruit aroma, exquisite taste, the alc. degree of complex fruit wine can get 13.8%, residual sugar 3.5%, total acid 5.1 g/L.
