The enzymic reactions in monolayers are well known for decades but small interfacial area limits their com. potential.Foams can be attractive alternate for enzymic synthesis because of large air/water interfacial area.Foams are solvent-free systems and would be environmentally very attractive for enzymic synthesis.The synthesis of phospholipid was carried out in foams using Glycerophospharylcholine (GPC) and fatty acid in the presence of lipase.In the foams system, Fatty acid stays the air-water interface; whereas GPC, water and lipase remains in foams lamellae.There are various parameters like source of lipase, GPC/water ratio, GPC/fatty acid ratio, temperature, pH and nitrogen flow rate which control the synthesis of phospholipids in foams.The products obtained from foam reactors were 1-acyl(Lyso) and 1,2 dioctyl phosphatidylcholine as determined by TLC and HPLC.
