A review.During the past years, new applications of electrodialysis were developed. This technol. is integrated in process lines for demineralization or purification of organic mols. to minimize salted waste streams linked to ion exchange resins or to replace solvent extractionConventional electrodialysis with monopolar ion exchange membranes is applied for demineralization, purification and concentration mainly in food industry (whey demineralization, tartaric stabilization of wine...), in fine chem. industries and chem. industries for purification of organic mols. (glycol, glyoxal, PhOAc, amines, lactate...).Bipolar electrodialysis with bipolar membranes allows the conversion of salt into acid and base forms. This technol. is mainly applied to split organic salts in acid such as lactic, gluconic, acetic... or mineral salts from salt streams to recover and re-use acid and base.In food industries, it can be applied to adjust pH of wine, fruit juices, proteins solution to avoid the use of chems. and keep products as much natural as possible.
