Mechanism of interaction between key active ingredients and myosin in tea-stewed beef: Improvement of myosin's structural and functional characteristics

This study analyzed the tea polyphenol components in four types of tea-stewed beef, identifying five key active compounds: epicatechin (EC), epicatechin gallate (ECG), epigallocatechin gallate (EGCG), gallocatechin gallate (GCG), and caffeine (CAF). Oxidative stability, structural changes, and antioxidant activity of complexes formed between these compounds and bovine myosin were assessed. Molecular docking and dynamic simulations were employed to investigate the interaction mechanisms. Results indicated that all five ingredients improved myosin's oxidative stability. Polyphenols modified myosin's surface hydrophobicity, proteolytic susceptibility, and secondary structure. Among the compounds, CAF exhibited the highest surface hydrophobicity (0.01658 mg) and the lowest proteolysis (22.94 %). EC enhanced myosin's secondary structure, and improved overall stability. Interactions of EC, ECG, EGCG, and GCG with myosin were driven by electrostatic, hydrogen bonding, and hydrophobic interactions, whereas CAF's interaction was primarily hydrophobic. This study provides a foundation for future research on polyphenol-protein interactions, complementing studies on tea's impact on meat quality.

Optimizing brewing conditions for low-temperature green tea infusions: Insights into functional and nutritional properties

In response to growing demand for functional, minimally processed foods and rising energy costs, various brewing conditions for low-temperature green tea production were explored as an alternative to high-temperature processing. Optimal polyphenol extraction was achieved at 85 °C for 30 min using distilled water and finely ground leaves (< 500 μm). Although similar conditions are recommended for tap water, this resulted in a tremendous reduction in both catechin yields and antioxidant capacity (AC), as determined by spectrophotometric and chromatographic analyses. Lowering extraction temperature to 20 °C and brewing for 12 h with distilled water led to exceptionally high AC, along with higher yields of vitamin C, vitamin B2, epicatechin, and epigallocatechin compared to any high-temperature brewing method. Notably, these benefits were evident only when whole leaves were used, rather than tea powder. Further research is needed to address technological challenges for industrial green tea production with distilled water.

The distribution of catechins and their derivatives among 114 Camellia plants and their correlation in different species and tea-processing suitability

China is rich in tea germplasm resources. Catechins and their derivatives were analyzed regarding their associations among species and tea-processing suitability using 114 representative Camellia plants. GCG, ECG, EGC, ECG3″Me, and EGCG were revealed as potentially useful markers for identifying different tea species, while three O-methylated catechins may be appropriate markers for determining the tea-processing suitability of oolong tea. A correlation analysis indicated that the EGCG3″Me content was significantly higher in varieties suitable for oolong tea than in varieties suitable for black and green teas. Catechin (C, GC, CG, and GCG) contents were significantly higher in Camellia ptilophylla Chang than in Camellia sinensis var. sinensis, Camellia sinensis var. assamica, and Camellia sinensis var. pubilimba Chang. Furthermore, 14 specific tea tree resources with a high catechin index and high EGCG, GCG, and EGCG3″Me contents were screened. This research enhances our understanding of associations among catechins and tea germplasm resources.
