Enzymes acting on inulin (I) or sucrose (II) were studied.Three enzymes, fructosyltransferase (EC 2.4.1.99) (III), endo-inulinase (EC 3.2.1.7) (IV), and exo-inulinase (EC 3.2.1.80) (V) were separated from the fermentation liquor of A. ficuum.III acted on II to transfer its fructosyl residue to the fructosyl moiety of acceptor II-producing fructooligosaccharides.It showed maximum action at pH 5.0 and 50°.III could be used for producing Neo-sugar, a mixture of 1-kestose, nystose, etc.).IV converted I to a mixture of fructooligosaccharides, mainly inulotriose and inulotetraose.It had a optimum pH at 5.0 and optimum temperature of 55-60°.When used in combination with V, it provides an efficient system for producing fructose from I.
